Tysul is a soft and subtle blue-veined cheese handmade by Jones’ Cheese Company in Llandysul, Ceredigion. It’s mellow and creamy with a slight sweetness. Toss with walnuts in a fruity salad, or drizzle with honey and enjoy on a toasted slice of fresh baguette.

Mark Jones makes his cheese in small batches using fresh local milk. His ethos is to create the finest artisan cheeses using techniques steeped in history and tradition. Although Tysul is a new cheese, Mark has been working in the artisan cheese industry for many years, and currently works to support other aspiring cheesemakers at Food Centre Wales in Horeb.

Tysul has already won a number of awards, including a Gold at the International Cheese Awards in Italy in October 2019.

MEET THE MAKER

Jones’ Cheese Company

Jones’ Cheese Company, run by Mark Jones in Llandusyl, Ceredigion, is an exciting new cheese producer making a terrific handcrafted blue cheese using age-old techniques.

Mark has many years of experience in cheesemaking, having worked at both Carmarthenshire Cheese and Caws Cenarth, but this is his first venture into running his own business. In recent years he has continued to grow his expertise whilst working as a Food Technologist at Food Centre Wales in Horeb. He has supported the work of many of the new producers who have made use of that fantastic facility, including Pembrokeshire Goats, Brooke’s Dairy and Trefan Dairy. We’re delighted that Mark has now channelled his knowledge into the development of his own delicious cheeses!

His first cheese, Tysul Blue, is gorgeously soft and creamy and has been a massive hit with our customers since it was first produced in 2018.
