Trefaldwyn Cheese is made by dairy farmer Glenn Lloyd and his wife Sandie, on their organic farm near Llandyssil, Montgomeryshire. The cheese was initially crafted by Clare Jones, a former primary school teacher who transitioned to cheesemaking in 2018. Clare identified a gap in the local artisan food market and began developing Trefaldwyn Blue on her kitchen table. Her dedication led to a creamy, full-flavoured blue cheese made from pasteurised cow’s milk.

The name “Trefaldwyn” is the Welsh word for Montgomery, translating to “Baldwin’s town.” Clare’s meticulous efforts culminated in Trefaldwyn Blue receiving significant accolades, including two stars at the Great Taste Awards and the title of Best Welsh Cheese at the World Cheese Awards.

In August 2023, Clare entrusted the legacy of Trefaldwyn Cheese to Glenn and Sandie. Glenn, a third-generation dairy farmer, and Sandie have embraced the opportunity to continue producing Trefaldwyn Blue, using organic milk from their own herd. Their commitment to regenerative agriculture and organic farming practices ensures the cheese maintains its renowned quality and flavour. Under this new stewardship, Trefaldwyn Blue continues to be celebrated for its creamy texture and bold, savoury tang, securing its place as a distinguished product in the Welsh artisan cheese landscape.

This rich blue cheese has a lovely egg-yolk orange colouring with ample blue veining. It has a dense, buttery texture and a gentle, slightly sweet flavour, with subtle lactic notes.
