Trefaldwyn, named after the ancient Welsh name for Montgomery, is a bold and creamy blue cheese, made in small batches by cheesemaker Clare Jones. In the short time that Clare has been making the cheese, it has won an impressive array of awards including a Guild of Fine Food Great Taste Award, and Best Welsh Cheese at the most recent World Cheese Awards.
Trefaldwyn is currently made at the Food Centre Wales in Horeb, Ceredigion, under the guidance of our friend Mark Jones. Clare is now looking to move the production of her cheese nearer her home in Montgomery.
This rich blue cheese has a lovely egg-yolk orange colouring with ample blue veining. It has a dense, buttery texture and a gentle, slightly sweet flavour, with subtle lactic notes.
