Teifi Seaweed is based on the Gouda-style Teifi Natural, with the addition of locally harvested seaweed. The laver seaweed adds a distinctive saltiness. As with all Caws Teifi cheeses, the seaweed variety has a mellow flavour that gets stronger with age. Consider using it as a topping for fish pie, or simply enjoy as part of a cheeseboard selection.
Caws Teifi was established by John Savage-Onstwedder and his family in the early 1980s, and over the past 40 years has become one of the most highly awarded artisan cheesemakers in Britain. It remains a small scale family business, these days led by John’s sons Rob and John-James.
