Teifi Natural is a raw milk, Gouda-style cheese made by Caws Teifi in Ceredigion, who’ve been making cheese in Wales for almost 40 years. It has a mellow, almost sweet flavour and a dense, smooth texture – and it melts into tempting strings, making it ideal for pizzas.
Teifi is available in 180g wedge, a 1kg quarter wheel and a 4kg whole wheel. The 4kg wheel is around 9.5cm tall and 25cm in diameter.
Caws Teifi was established by John Savage-Onstwedder and his family in the early 1980s, and are now one of the most highly awarded artisan cheesemakers in Britain. It remains a small scale family business, these days led by John’s sons Rob and John-James.
