Teifi Mature is based on Teifi Natural but aged for 6 to 12 months. The maturity gives it a stronger flavour than the Natural and intensifies the complexity of the raw milk, giving the cheese a more dense, almost Comte-esque texture and taste. The underlying flavour is due to the diversity of the traditional meadows, grasses and hedges on which the dairy cows graze.
Caws Teifi is a family-run business based in Ceredigion, and they have been making cheese in Wales for almost 40 years.
