Radnor Shepherd is a ewes milk Gouda-style cheese made by Trefan Dairy near Builth Wells, in the heart of Mid Wales. The cheese is named after the historic county of Radnorshire where sheep farming has been integral to the communities for centuries. The cheese is made on the farm, just metres from the rich Powys grassland where the sheep roam throughout the year.
Radnor Shepherd is matured for a minimum of 8 weeks, creating a dense and subtly sweet cheese, with the delicate crispness typical of a fantastic ewes milk cheese.
