Radnor Blue is a blue ewes milk cheese made by husband and wife team Kathryn and Peter Morris of Trefan Dairy in Mid Wales. The farm is made up predominantly of beautiful grassland pastures with an abundance of floristic diversity, making it perfect for the farm’s herd of 60 pure Friesland sheep.
The cheese is soft with silvery blue veins of mould throughout, which are created by puncturing holes in the wheels before they are matured for a minimum of 5 weeks. The resulting flavour is a wonderful balance of mellow ewes milk and delicious creamy blue.
