Caws Penhelyg Abaty is an organic, raw-milk soft cheese very similar to a classic Brie. It is made on a very small scale by Roger Yorke in his micro-dairy near Aberystwyth. Roger established the dairy on his family farm in 2021 with the aim of creating really exceptional artisan cheeses. Over the years Roger has been a professional actor, a balloon pilot and a property developer among other things, but his new passion is cheesemaking, and luckily for us its something he clearly has a great talent for!
Caws Penhelyg’s first cheese, Caws Penhelyg Abaty, is a beautiful soft mould-ripened cheese. The recipe was developed with the help of our good friend Mark Jones at Food Centre Wales, but has now moved production to a tiny purpose-build dairy on the family farm. The cheese is made by hand in very small batches of just 33kg, using milk sourced from a local organic farm. In the short time it has been produced it has built up an enviable reputation in the local area and is already featured on the menu of one of Wales’ most famous Michelin-starred restaurants.
