Caerfai Cheddar is a traditional unpasteurised Cheddar made by hand on Caerfai Farm near St Davids in Pembrokeshire. The cheese is made with milk from Caerfai Farm’s own cows, and is formed into cloth-bound truckles of around 5kg. The truckles are then matured for between 6 and 12 months.

This mellow, organic Cheddar has long been popular with chefs and delis in the St Davids area, and we’re delighted to now be bringing it to a wider audience. We love it in an indulgent cheese toastie or as part of a cheeseboard.

Caerfai Farm

Inspired by the birth of his grandchildren, and the increasingly visible effects of climate change on Pembrokeshire’s soil, third-generation farmer Wyn Evans has become a pioneer of eco-friendly farming practices. Coastal Caerfai runs on 100% renewable energy produced on site using solar panels, wind turbines and geothermal sources – as well as the herd’s plentiful cow pats (used for methane capture). Even Wyn's farm vehicles are electric.

Caerfai farm has been producing cheese for almost 25 years, and certified organic since 1993. The unpasteurised Cheddar and Caerffili cheeses are handmade by Linda, Wyn’s daughter, using traditional recipes. The farm overlooks Caerfai Bay (near St. Davids), a beautiful sandy cove surrounded by purple sandstone cliffs, meaning the dairy cows have great coastal views as they graze on 180 acres of chemical-free grassland almost year-round.
