Brightwell Ash is a soft, ash covered goat’s cheese made by Fraser Norton and Rachel Yarrow on their farm in Carmarthenshire.
Fraser and Rachel have been cheesemakers since 2015, getting their start as tenant farmers for the Earth Trust Farm in Oxfordshire. In 2025, they moved to their very own farm, Pencrug, in Wales, where Rachel’s parents previously worked in the 1970s.
Brightwell Ash is a silky cheese with a nutty, tangy flavour. The ash rind develops natural moulds which deepen the flavour. The cheese’s Welsh name, Onnen Brightwell, is a homage to the ash trees on their current farm in Carmarthenshire, Onnen being the Welsh word for ash tree. Brightwell comes from the local village near their old farm in Oxfordshire, Brightwell-cum-Sotwell.
