Brefu Bach, or ‘Little Bleat’, is a superb unpasteurised ewe’s milk cheese made by Carrie Rimes of Cosyn Cymru in the foothills of Snowdonia. This soft, mould-ripened cheese has delicate sweetness and a texture that is almost like fromage frais.
Carrie has used her experience of working in several different French fromageries to create Brefu Bach, primarily using milk from local heritage-breed sheep. This organic cheese is made using a vegetarian rennet derived from thistle extract.
** Please note that as Brefu Bach is a young mould-ripened ewes’ cheese it has quite a short shelf life. We will supply it with a minimum use-by date of 4 days.**
