Trefaldwyn Cheese

Trefaldwyn is named after the ancient Welsh name for Montgomery, home of Trefaldwyn Cheese’s founder, Clare Jones. Trefaldwyn Blue is a full-flavoured and richly veined cheese produced by hand in small batches of just 60kg.

Former primary school teacher Clare perfected the recipe for Trefaldwyn with support from the Food Centre Wales in Horeb. Her approach to cheesemaking was inspired by the unspoilt landscape of the Welsh Marches, with its dairy farms and rich pastures, and a drive to create a fantastic new cheese using the best possible ingredients. Her hard work  clearly paid off! Trefaldwyn has come away with awards from many competitions in the few years that it has been made, including prestigious prizes from the Great Taste Awards and the Artisan Cheese Awards, and both a Gold and Best Welsh Cheese at the World Cheese Awards.

In 2023 Clare passed production of Trefaldwyn Blue over to a local organic dairy farm, Daisy Bank Dairy, run by Glenn and Sandie Lloyd. The cheese is now made on the farm using milk from the farm’s herd.
